A week of memories: Memorial Day Weekend

A long weekend came at a perfect time.  Work has been bananas the last few months and an extra day off was overdue.

I was on the road several days last week, making my way up north a few hours to Yulee.  It's an area a little north of Jacksonville, near Fernandina Beach.  We had a new model just complete and I went up to help the team get the model ready to open.  Take a peek at the video tour of the model here.

Fast forward to the weekend......Lake season is in full gear.  If I am not racing, I am at the lake with the fam.  I hope they enjoy our time together as much as I do.  :)








Simon was out riding with his buddies on Saturday.  Sunday we hit a graduation party and grabbed some dinner after.  It poured nearly the entire time we were at the party (including on the run from the car to their house) but the rain passed once we left so we headed to a rooftop pizza spot overlooking the water.

Yesterday was a day of rest.  Simon made us dinner on the grill and we caught up on house work and some rest.  I have a short week ahead of me.  I head to Destin, Florida on Thursday for a work outing. We have some meetings planned but also some fun, rest and a chance to work on my tan.

Summer (foil packet) recipes for the grill

It's suuuummmmmeeeerrr!  So exciting.  I am not tan yet but am well on my way.  I will be spending lots of weekends on the water and did some Pinterest browsing for some summer recipes and are sharing the best ones (so far).  Enjoy!




Almost a meal in itself!  This cheesy chicken mixed with green beans looks simple and tasty.

Grilled peaches are the essential summer treat and these look amazing!


Campfire cones...saving the best for last.  I just recently made these and the kids LOVED them.

Summer is officially here

Sweet summertime!  My sis went boating last weekend and I caught up with them this weekend.  My niece, Payton had some friends stay over and they were so much fun.  
We will be boating every weekend thru Labor Day.  It's a family tradition for the last 30 years and I hope we are always able to spend this special time together.

5K+ TPC + Orlando City + Mother's Day

Phew....another jam-packed week.  Last week we packed in lots of fun.  
To start, my little soccer team did a 5k for Nemours Hospital.  My nieces have made many visits over the years to Nemours so we thought it was the perfect choice to support.  The girls had so much fun and we also got a few moms to run with us.
 On Friday, I headed to Ponte Vedre for our annual work outing to TPC at Sawgrass to catch The Players Championship.  The course is BEYOND beautiful.  If you haven't been to anything like this, you must.  Grounds passes aren't very expensive and are worth every penny.
 We followed Tiger for a few holes.  He still has the biggest following of all the players and you can hear the crowd cheering him on from almost anywhere on the course.

After a lovely day at TPC, I headed south and caught my first pro soccer game.  Orlando has a new team, Orlando City and my brother-in-law got us tickets to catch a home game.  Turns out, soccer has tailgating similar to football and although we got there just before the game started, we passed lots of fun gatherings on the way in.
 My niece was sooooo excited to catch the game.  Can you tell?!!!

OC rallied from two points behind to score a 2-2 tie.  The stadium was more than half full, which seems like a victory since soccer isn't one of the most followed sports in America.
Speaking of soccer, these little ladies had another amazing game Saturday and sealed the deal on our first place ranking in the league.  Aren't they the cutest?  They are just as sweet as they are adorable.
Sunday was of course, Mother's Day and I am sad to say I got zero pictures.  Booooo
Simon and I went out and about to deliver flowers to the special moms in our lives and we had flowers delivered to his mom and grandmother in NC.

I am on the road the next few days for work and am looking forward to some outings at the end of the month.  Memorial Day relaxation sounds great about now......hope you are off to a super week!

Weekend Rewind: 24 hours of racing + Soccer Sunday

Home sweet home.  Pops and I had a loooonnnnggggg road trip this weekend.  We headed to Georgia (4ish hours) Friday night to race.  We went to the track and got back to the hotel about 10:30pm. After a quick stop at Wal-Mart for some supplies, we grabbed some food from the deli and had a super glam dinner back at our resting spot.

We woke up at 6:30 on Saturday, raced allllll day and didn't leave the track until 11:30 pm.  After a couple stops for a little rest we rolled in at 8:00am Sunday.




I got just over an hour of rest before I had to get back up and head to my soccer game.  I was exhausted but the little ladies helped me forget all that.  They were so excited when I got to the field.  I missed Saturday's game so I got a play-by-play of everything that happened.
I finally got back home a little after 2:00 and crashed until 6:30.



Simon woke me up briefly to see what I wanted for dinner but I was in no mood to make any decisions so he ordered us a pizza and let me rest.
I am in town most of the week and am headed to the Orlando City soccer game Friday night and a little family lunch planned for Mother's Day.  I am dying for a haircut so hopefully I can find a little time to get trimmed up.  Hope y'all have a super week!
