Recipe: Slow Cooker Creamy Chicken & Rice

Get ready...this is easy and delicious.  FOUR ingredients.  Yep, yep!

Ready?  Here goes: < This recipe serves two >

1 block of cream cheese - softened/thawed so it can be mixed with other ingredients
1 packet of dry Italian dressing seasoning
1 can of Cream of Chicken soup
2-3 Chicken breasts (I used what you see below since I don't like to handle the chicken raw)
2-4 servings of rice

Add everything except chicken.  Mix well.  If your cream cheese isn't sofe enough, put slow cooker on low for 15-20 minutes and then mix everything together.

Add chicken on top.  Cook high 4-6 hours or low 6-8 hours

Prepare rice just before serving.  We used white rice.  You can flavor your rice to your taste.

Slow Cooker: 5 ingredient Chicken Tortilla Soup


This is as easy as it gets! 5 ingredients.  About 5-6 hours...makes enough for 4-6 people.

Ingredients:
3 chicken breasts (boneless, skinless)
1 packet of taco seasoning
1 jar of salsa 
1 can of black beans (add to taste)
1 32oz chicken broth

Prep: (Less than 5 minutes)
Spray no-stick spray for easier cleanup
Place chicken breasts along the bottom of the cooker
Sprinkle taco seasoning over the chicken
Pour in jar of salsa
Drain black beans and pour in.  (I used the flavor above and poured in without draining)
Pour in chicken broth.

Cover - Cook on high for 5-6 hours, depending on your cooker.
Remove 30 minutes before, shred chicken and pour back in.

Alternatives: I wish I added corn to mine.  I thought about it at the store but forgot to add once I got home.  My husband added a little shredded cheese to his and enjoyed it.

Recipe: 4 ingredient pesto chicken dinner

Hey friends!  We tried a new recipe over the weekend and it is a winner.  I am sad to say I didn't take any photos...#FAIL but the recipe came skinnytaste.com (photo credit: SkinnyTaste.com)
Here ya go:
Chicken breasts (Boneless)
Pesto (I had normal flavor, Simon had Sun-dried tomato flavor)
Tomato slices
Mozzarella cheese

Heat oven to 400

Simon butterflied the chicken breasts, topped with pesto, sliced tomatoes and cheese.  It was that simple.  He baked for 15 minutes or so and got the cheese perfectly golden brown.  We combined with some angel hair pasta and were so excited to have a "new" way to serve chicken.
